The utensil, a basin, was placed on a supporting base and freshly milked and strained milk was poured into it, allowing the cream to rise to the surface. The cream thus collected was then drawn off with a spannatoia. It was an essential tool during milk processing to separate the cream and obtain dairy products such as butter.
